Whether your heart is bleeding with love this Valentine’s Day or you’re just looking for a delicious something to treat yourself to, these super easy sugar cookies with a jam center are perfect for this holiday weekend. I found this recipe a few years back while searching for sweet Halloween treats. The original Vampire bite cookies were easy to translate for Valentine’s day with the help of a heart-shaped cookie cutter. Plus the “bleeding” effect when you take a bite in seems just as appropriate for this holiday that’s all about the heart.
Bleeding Heart Cookies
makes approx. a dozen cookies- recipe adapted from Baking Bites.
¾ cup butter, softened
½ cup sugar
1 large egg
½ tsp. vanilla extract
1/8 tsp. almond extract
1-1/2 cups all purpose flour
¼ tsp. salt
In a large mixing bowl cream together the butter and sugar. Combine with the egg and vanilla and almond extract. At a low speed add the flour and salt to the mixture until the dough is just combined. Wrap the dough in plastic wrap and refrigerate for at least an hour.
Before taking out the dough preheat your oven to 325 degrees. Divide the dough in half, putting one half back in the refrigerator. Working somewhat quickly, roll out the dough on a lightly floured surface until it’s about 1/8” thick. Cut out your heart shaped cookies and place them on a lightly greased baking sheet. A thin metal spatula works great for transferring the cookies and I highly recommend using AirBake pans- they consistently provide a cookie thats perfectly baked and never burnt. Put a little less than a teaspoon of jam on the center of each cookie and cover it with another heart cut-out. Press the edges down lightly to seal in the jam.
Bake for approximately 12 minutes until the cookies are set. The top of the cookie might crack open a bit, showing some of the red jam (which I think adds to the effect!) Let them sit for about 5 minutes on the pan outside the oven and then transfer to a rack to allow them to finish cooling. Because these bake at a slightly lower temperature than some cookies they don’t really brown during baking. This results in a cookie with a nice crispy edge and a soft chewy, gooey, and oh so delicious jam center.
Sprinkle with confectioners sugar and share these cookies immediately! One bite in and you’ll be in love!
