Happy Friday friends!

With an upcoming birthday and beach vacation in mind, I wanted to try out a cocktail that was worthy of a palm-trees and sand sort of celebration! When I think of warmer climates and days off my mind immediately turns to margarita's and pina colada's- they're both cool, refreshing drinks, best shared with friends on warm summer nights. Looking for cocktail inspiration that channeled the flavors of these 2 tropical-minded drinks, I came across several recipes for Coconut Margarita's and I knew I had struck gold! Creamy, cool coconut flavors pair perfectly with a hint of lime and tequila, making a cocktail that is a little sweeter than a traditional margarita but not as sugary as a daiquiri or pina colada. 

Without further ado, I present to you the recipe for making this absolutely delicious drink! Enjoy!

Coconut Margarita's

inspired by foodiecrush's recipe; serves 2

2 Tbs. coconut cream (found in the International section of most grocery stores or at Asian markets)

2 Tbs. coconut milk

Juice of 1/2 lime plus lime wedges for garnish

3 oz. tequila (reposado or blanco)

1-1/2 oz. Cointreau

1/2 oz. Agave nectar or simple syrup (adjust depending on your preferred level of sweetness)

Combine all ingredients in a cocktail shaker with ice. Give it a really good shake to combine all the ingredients and serve it on the rocks with a wedge of lime.
