Hectic week aside, hopefully you all had a wonderful long holiday weekend! As the unofficial kick-off date for summer fun, Memorial Day is the perfect time to put away all your remaining winter garb (no more boots!), refresh your stash of sunscreen, and blow up and inner tube or two to float on the now-open pool waters. And with many warm days ahead to look forward to, you'll need an easy (re: minimal ingredients and prep time) cocktail to enjoy! I promise this will become your go-to drink for the summer!
I was first introduced to the Italian liqueur Limoncello while studying abroad in the summer of 2008. After a day of wandering the streets of Venice (and getting lost many times,) my friends and I landed ourselves on a sunny patio and treated ourselves to slices of pizza and icy-cold glasses of limoncello. It was a perfect moment and the memory of that refreshingly tart-yet-sweet liqueur has lasted with me today. Limoncello to me is sunny days with friends, captured in a bottle. The perfect summer companion! Another great thing about limoncello is that it's a simple combination of a lemon zest infused spirit with simple syrup, so it works as a perfect sub-in for cocktails that use lemon juice and sweetener- like the Bee's Knees and the French 75. Tasty and versatile!
1 oz. limoncello- I used a locally made brand, Tessora, which was very good
1 oz. gin- try Watershed Distillery's Four Peel Gin if you're not a huge gin fan- it'll change your mind!
4 oz. club soda
handful of raspberries (optional but tasty!)
Combine the limoncello, gin and berries in a cocktail shaker and muddle together using a muddler or the back of a wooden spoon. Strain the mixture into a tall glass. Fill the glass with ice and top with the club soda. Stir together and enjoy!
