Hello and happy Friday!
What better way to end a week of tassel-inspired designs than with a simple summer cocktail adorned with a gold sparkly, tassel-y cocktail stirrer! It's the perfect festive complement to any fancy beverage and looks especially nice with this colorful watermelon mojito! Amanda had made these gold sparkly drink stirrers to accent her sangria at her wedding last year. Inspired by Martha Stewarts festive tinsel drink stirrers Amanda (plus a few very helpful friends and family members) made her own version, wrapping fringy gold yarn around the tops of the cocktail stirrers rather than tinsel. She gave me a few of her extras to use for crafts or cocktails and when I came across several recipes for Watermelon Mojito's I knew they would be the perfect "garnish" to this drink. Like other summer cocktail that I've shared, this watermelon mojito is simple to make and uses common ingredients you can find at your local supermarket (or garden!) The fresh juicy flavors of watermelon pair perfectly with the crisp minty-lime flavors of a traditional mojito to create a cocktail that is light and refreshing- perfect for these 90 degree days!
makes 2 delicious servings
3 oz. white rum
1-1/2 oz. fresh lime juice
2 oz. simple syrup
4-5 small cubes of watermelon
10 mint leaves plus sprigs for garnish
splash of club soda
- In a heavy glass or cocktail shaker muddle together the white rum, mint leaves, watermelon cubes, simple syrup, and lime juice. Muddle until the mint leaves are bruised and the watermelon has been reduced to mostly juice.
- Divide the mixture into 2 old-fashioned glasses with ice. If you're not a fan of fruity floaters in your drink you can strain the mixture.
- Top off each glass with a splash of club soda.
- Garnish with a watermelon sparkle skewer and a sprig of mint and enjoy!!
Enjoy these dangerously delicious and super refreshing cocktails outside with friends this weekend- and all summer long!
Have a fabulous weekend and stay cool!
