I'm not one to normally wish away spring- it's my birthday season after all- but I'd be hard pressed to deny that a tropical island getaway sounds about perfect right now. With plenty of Pina Colada's brought to me beach side! A girl can dream right? And with a forecast for snow this weekend in Ohio I'm going to need a little help getting my mind-state to warmer, sunshine-filled days. I've found the perfect way to banish the cold weather blues is with a few fruity tropical drinks and some serious vacation planning! So get out the rum and fire up the internet to start dreaming up your perfect warm-weather getaway!
The Pina Colada is one of those essential summertime drinks that every home bartender should know how to whip up. They're great for poolside parties, warm afternoons on the patio, or anytime you need a little sunshine in a glass. And the good news is that it's incredibly easy to create! Transporting yourself to island time is just a few simple ingredients and a quick blend away!
makes 2 frosty drinks!
4 oz. (1/2 cup) cream of coconut (*not coconut milk!)
4 oz. (1/2 cup) pineapple juice
3 oz. light rum
approximately 2 cups of ice
pineapple slices and maraschino cherries for garnish
*for greater fruit flavor try blending in frozen strawberries or mango!
- In your blender combine the cream of coconut, pineapple juice, rum and ice.
- Blend until the mixture is smooth and creamy.
- Divide evenly into 2 hurricane glasses (or wine glasses if you're like me and don't have hurricane glassware!) and garnish with a slice of pineapple and a maraschino cherry. Enjoy!!
